Dolcè is our headquarters leading a project based on a balance between tradition and innovation, from where every single bottle of wine derives its scientific planning. Furthermore, it is in Dolcè where Albino Armani carries out his courageous “Alta Valpolicella Classica” project, producing wines from the hills, characterized by vibrant freshness and vigor.

Valdadige

There are 8 ancient fortifications that dominate the land from above. The valley lies in a tight gorge between the rocky bastions of Monte Baldo and the Lessinia Mountains. And the limestone rocks reverberate upon the vineyards’ light, crystalline by the strong prevailing winds. A precious reflection! And the daylight hours are extended, favoring the ripening of the grapes, while glacial moraines baptize gravely, draining soil, which is ancient and precious.

Valpolicella

On the highest hills of Valpolicella Classica, in Marano, the vineyards occupy the highest belt of arable land before the extreme limit of the mountain. An environmental context that is the premise for growing several autochthonous and distinct grape varieties, in perfect exposure to the sun. For human beings the only thing left to do is to respect the slow and demanding rites of growing grapes and making wine, following the teachings of tradition. The drying of the grapes takes place naturally in the fruit drying area adjacent to the wine cellar.

Our Amarone Riserva is named after Cuslanus, an ancient god worshipped in Valpolicella at the time of the Etruscans more than 2000 years ago. Cuslanus was connected to the idea of the passing of time, just as this wine needs a long time to fully express its complex personality that evolves into balsamic and ethereal scents, endowing each glass with elegance and balance. Obtained through the soft discontinuous bain-marie alambic still distillation process, using the dried grape pomace of our Amarone produced on the high hills of Valpolicella Classica. Colorless and crystal clear, the intense bouquet recalls the skins of the dried Amarone grapes, with light hay hints and great complexity. On the palate it is smooth and persistent, elegant and dry, with light scents of ripe fruit. The aftertaste is long, rich and delicate at the same, typical for a grappa that has been distilled from red pomace. Already known in Roman times, Recioto represents the pearl of Valpolicella preserving the old drying grapes technique in a hilly landscape dotted with small hamlets and vineyards on stone-walls terraces, the typical “marogne”. Intense garnet red color with violet hues. On the nose intense mature red fruit recalling of cherry in sour brandy, chocolate and coffee. Valpolicella Egle Classico Superiore

This wine is an authentic expression of the terroir of Marano’s high hills in the Valpolicella Classico area. It is here where the volcanic soil and the fresh climate with intense thermal shifts are decisive natural elements enhancing its elegant personality. In the glass the ruby-red color is bright and refined, the bouquet is crisp as the fresh air of the hills this wine springs from, recalling their fragrance: red fruit, plum and cyclamen imbued by a light balsamic note. The sip is welcoming but nonetheless vibrant and sapid, with an aromatic persistence of rare elegance. The Valpolicella Ripasso wine is the result of a traditional technique that consists in pouring the fresh Valpolicella wine over the still warm and sugary pomace of the Amarone, increasing its structure, body and flavour. In the glass, the changing transparencies of the ruby red color merge into a bouquet that recalls blackberries, ripe cherries and dark spices together with minty notes. The ageing in wood enhances its elegance and balance. The fresh and long finish is pleasantly fruity with a hint of dark chocolate. Foja Tonda Casetta Albino Armani

The Casetta, called “Foja Tonda” (round leaf) in local dialect, is an indigenous red grape variety cultivated since ancient times in Valdadige, between the regions Veneto and Trentino. Since the market favored other more prolific grape varieties, little by little Foja Tonda disappeared until it became almost extinct. Luckily, Albino Armani rediscovered it in the 1980’s. The wine making team is still involved in research related to the genetic improvement of this ancient varietal. Today Foja Tonda is considered the symbol of our company and is included in the “Conservatoria”, a collection of old indigenous varietals from the Adige Valley, witnessing the passion that binds us to our land. This wine, with its distinct personality, enchants and intrigues the wine lover with its ancestral origin. It is recognizable for its scents of dried prune, wild cherry, cinnamon, tobacco and musk that underscores its wild origin. On the palate it is fresh and persistent. It evolves splendidly with balsamic and ethereal aromas after a few years of ageing. The history of Lugana is strictly connected with the southern part of Lake Garda which is luckily influenced by a delicate but constant breeze. The vineyards growing on terrains close to its shores feed on mineral substances enriching the Turbiana grape with unique characteristic. Straw yellow color. On the nose it offers fresh fragrances of citrus and aromatic herbs such as sage and mint. On the palate it is tasty and well structured, sustained by a lively acidity and intriguing sapidity. Moscato, an aromatic wine par excellence, is traditionally consumed in the sparkling version to better appreciate its impressive fruity and floral bouquet and the bright golden color. On the nose it offers intense and captivating fragrances that recall citrus, orange flowers and mature peach. On the mouth it is soft and slightly sweet with a long, fresh and mineral finish. Its fine perlage enhances the wide array of aromas. A small vineyard at the entrance of our winery, welcomes the visitor. It is the “Conservatoria”, a collection of old indigenous varietals in danger of extinction from the Adige Valley. Among these, you will find the Nera dei Baisi. This vine gave us great results in terms of aromatic profile during the microvinifications carried out in collaboration with the Research Institute of San Michele all’Adige in Trentino. It is a red variety and the only surviving vine was found hanging down from a balcony in a small hamlet called “Baisi”, in the Trentino region. Nera dei Baisi has a bright ruby red color and an intense bouquet of ripe strawberries, blackberries and raspberries. In the mouth it is fresh and fragrant, silky, with low tannins, very easy to drink, with a well balanced acidity. Given the good results of aging in wood, we have decided to move on with this project and planted a small vineyard of Nera dei Baisi from which we obtain about 2000 numbered bottles per year. Pinot Grigio Colle Ara Albino Armani

In the Adige Valley the climate is characterized by intense thermal shifts and constant wind. These favorable conditions make this area ideal for the cultivation of Pinot Grigio. Years of experience with this vine have allowed us to reach levels of excellence. For our “Colle Ara” we select grapes cultivated on ancient terraces that are perfectly exposed to the late afternoon sun. The pink Pinot Grigio grapes are cold macerated with their skins, giving the wine a good structure and a sophisticated “gold rosé” color. On the nose it offers fruity notes with scents of pomegranate and peach. On the palate it is smooth and persistent, with a pleasant sapidity which is typical of the wines springing from this valley. In the southern part of Valdadige, the climate is characterized by intense temperature shifts and constant winds. These climatic conditions, together with the great experience of our vine-growers, make this an ideal place for the cultivation of Pinot Grigio. Years of research on this varietal have allowed us to achieve levels of excellence. Straw yellow in color with light ash-grey hints typical of Pinot Grigio. The scent is intriguing, with intense notes of lime, pear and aromatic herbs such as mint and sage. In the mouth it is sapid and complex, fresh and persistent. Our olive grove is located on Morainic hills south east of Lake Garda, an area traditionally suited to the production of an extra virgin olive oil with unique characteristics. From the indigenous varieties Casaliva, Leccino, Favarola and Grignano, we obtain a complex, refined and medium fruity oil, with distinct vegetable and fruity scents.
