Manual harvest and low production in balance with the mountain environment.<br \/>\n<strong>Vinification:<\/strong> once the cuv\u00e9e is ready, in spring we proceed with the ridding. The bottles rest on yeast for at least 36 months before d\u00e9gorgement. The zero dosage makes this \u201cmetodo classico\u201d an authentic expression of the Trentino mountains.<br \/>\n<strong>Food pairings:<\/strong> it is the perfect companion for a refined aperitif.
